LAKHNAWI ANDAAZ

SRM Hotel and SRM Institute of Hotel Management jointly organizing Food Festival in name of ‘LakhnawiAndaaz’

 Lucknow,

the capital city of Uttar Pradesh is also the largest city of the same and the twelfth most populous urban agglomeration of India. It is known as a multicultural city that flourished as a North Indian cultural and artistic hub, and the seat of power of Nawabs in the 18th and 19th centuries. It continues to be an important centre of governance, administration, education, commerce, aerospace, finance, pharmaceuticals, technology, design, culture, tourism, music and poetry.

‘The city of Nawabs’ is like a quintessential gourmet central for every food enthusiast. The traditional food of Lucknow was highly patronized by the nawabs of Lucknow during their time, thus giving it a royal touch. The royal chefs and cooks were trained to render an exquisite culinary spread, fit for nawabi taste.

Lakhnawi cuisine is delightful, especially for a non-vegetarian. You have a wide range of kebabs, parathas, brilliant naans, mouth-watering kachoris, creamy kulfis and many more scintillating preparations like kormas, kaliya, nahari-kulchas, zarda, sheermal, roomalirotis and warqi parathas to appease your taste buds.

The Awadh region has its own distinct “Nawabi”-style cuisine. The best-known dishes of this area consist of biryaniskebabs and breads. Kebabs are served in a variety of styles; kakori, galawati, shami, boti, patili-ke, ghutwa and seekh are among the available varieties The Tunde ke kabab restaurant has operated for more than a century and is the most popular source of kebabs. The reputation of Lucknow’s kebabs is not limited to the local population and the dish attracts people not only from other cities but also from other countries.

The cooking technique usually incorporates the ‘dum style’ where the food is cooked over a low flame. The balanced blend of spices and the use of aromatic and fiery masalas like saffron, red chilli, cinnamon, cardamom, etc, give Lucknawi food a distinct flavour. It is not just about the ingredients that simmer in the cooking  pot, but also the way they are cooked and the meticulously elaborate way in which the final dish is presented.  It is a skill that has been acquired by rigorous practice and is something that has been carried down by generations over the years.

This authenticity has set its remarkable beginning in the ‘POOL VIEW RESTAURANT OF SRM HOTEL’ where the nawabi platter has been arranged for your dinner table, putting together a royal menu in LAKHNAWI ANDAAZ, to experience the brilliance of Lakhnawi food.
